La presente Tesis doctoral tuvo como objetivo general revalorizar hojas de remolacha (Beta vulgaris L. var conditiva), un subproducto hortícola frecuentemente descartado en la cadena de producción, mediante la recuperación de compuestos bioactivos y la evaluación de sus potenciales aplicación en matrices alimentareas y materiales envasados. En este marco, se abordó la extracción verde de polifenoles y betalaínas, empleando agua como solvente y tecnologías de intensificación basadas en ultrasonido y extracción subcrítica. En una primera etapa, se evaluaron distintas estrategias de preacondicionamiento y pretratamiento de la materia prima, incluyendo congelación y deshidratación por convección, con el objetivo de estabilizar el material vegetal, desacoplar temporalmente el proceso extractivo del momento de cosecha y analizar el impacto de estas operaciones sobre el rendimiento de extracción y la estabilidad de los compuestos bioactivos. Los resultados evidenciaron que las características estructurales de la matriz y su contenido de humedad condicionan significativamente la eficiencia cinética de extracción y la estabilidad de los pigmentos naturales. Este comportamiento pone de manifiesto la criticidad de optimizar las operaciones de pretratamiento con el fin de salvaguardar la integridad de las fracciones bioactivas. Asimismo, se evaluó la aplicación de radiación UV-C sobre la materia prima, observándose que su principal contribución estuvo asociada a la mejora de la inocuidad microbiológica, sin generar incrementos significativos en el rendimiento de extracción. Posteriormente, se evaluó la extracción acuosa asistida por ultrasonido (EAU) en función de variables operativas críticas: la modalidad de irradiación (continua vs. pulsada) y el grado de procesamiento de la materia prima. La cavitación acústica promovió la disrupción celular y potenció la transferencia de masa, incrementando significativamente la recuperación de bioactivos respecto al método convencional. En particular, el ultrasonido pulsado demostró una eficiencia superior frente al modo continuo, optimizando el consumo energético y preservando de forma selectiva los compuestos termosensibles. Asimismo, la reducción en el tamaño de partícula de la biomasa ejerció un rol determinante en la maximización de los rendimientos extractivos. La optimización del proceso de extracción acuosa asistida por ultrasonido pulsado se llevó a cabo mediante una estrategia experimental escalonada. Inicialmente, se aplicó un diseño factorial fraccionado para identificar las variables de mayor influencia sobre el rendimiento de los compuestos bioactivos. La identificación de esos factores críticos, permitio reducir el espacio experimental y orientar la etapa de optimizacón hacia a las variables con mayor impacto sobre las respuestas de interés. Posteriormente, las variables seleccionadas fueron evaluadas mediante la metodología de superficie de respuesta, lo que permitio modelar el comportamiento del sistema y encontrar las condiciones operativas mas favorables para maximizar simultáneamente la recuperación de polifenoles y betalaínas, obteniendose modelos predictivos robustos y validados experimentalmente. En una etapa posterior, los extractos optimizados fueron incorporados a un batido vegetal modelo con el fin de evaluar su potencial como ingrediente funcional. Los resultados demostraron que la incorporación del extracto permitió incrementar el contenido inicial de compuestos fenólicos y betaxantinas, respecto del sistema control. Durante el almacenamiento refrigerado, el batido fortificado mantuvo, en general, concentraciones superiores de compuestos bioactivos confirmando la viabilidad tecnológica de emplear extractos de hojas de remolacha para la fortificación funcional de matrices vegetales. Asimismo, la incorporación del extracto no comprometió la calidad microbiológica del producto, aunque la estabilidad de los pigmentos betalaínicos continuó representando una limitación relevante para maximizar su aprovechamiento tecnológico. Finalmente, se evaluó la extracción con agua subcrítica como una estrategia tecnológica alternativa y de carácter sostenible frente a las metodologías previamente estudiadas para la recuperación de polifenoles y betalaínas. En este proceso, se analizaron dos regímenes térmicos con el fin de determinar su influencia sobre el rendimiento de recuperación. A partir de las fracciones obtenidas, se desarrollaron películas biodegradables activas basadas en ácido poliláctico o almidón termoplástico. Estas formulaciones evidenciaron actividad antioxidante, capacidad de bloqueo de la radiación en la región UV-visible y modificaciones en sus propiedades de barrera, validando su aptitud como empaques activos. Asimismo, mediante un ensayo de oxidación acelerada empleando aceite de girasol, se constató la capacidad de estos films para prolongar la estabilidad oxidativa del sistema lipídico. En conclusión, los hallazgos de esta Tesis Doctoral convalidan el potencial tecnológico de integrar procesos de extracción verde (asistidos por ultrasonido pulsado y agua subcrítica), con aplicaciones directas en matrices alimentarias y sistemas de envasado, consolidando la valorización integral de las hojas de remolacha. Este enfoque metodológico establece un precedente clave para el aprovechamiento sustentable de subproductos agroindustriales, robustece los principios de la bioeconomía circular en el sector agroalimentario y provee soluciones innovadoras para la obtención de ingredientes naturales y biomateriales activos de alto valor agregado.
This doctoral dissertation aimed to valorize beet leaves (Beta vulgaris L. var. conditiva), a horticultural by-product frequently discarded along the production chain, through the recovery of bioactive compounds and the evaluation of their potential applications in food matrices and packaging materials. Within this framework, the green extraction of polyphenols and betalains was investigated using water as a solvent and intensification technologies based on ultrasound-assisted and subcritical water extraction. In the first stage, different raw material preconditioning and pretreatment strategies, including freezing and convective drying, were evaluated with the objectives of stabilizing the plant material, temporally decoupling the extraction process from harvest time, and assessing the impact of these operations on extraction yield and bioactive compound stability. The results demonstrated that the structural characteristics of the matrix and its moisture content significantly influence extraction kinetics and the stability of natural pigments. These findings highlight the critical importance of optimizing pretreatment operations to preserve the integrity of bioactive fractions. In addition, the application of UV-C radiation to the raw material was assessed, revealing that its main contribution was associated with improved microbiological safety, without generating significant increases in extraction yield. Subsequently, ultrasound-assisted aqueous extraction (UAE) was evaluated as a function of critical operational variables, namely irradiation mode (continuous versus pulsed) and the degree of raw material processing. Acoustic cavitation promoted cell disruption and enhanced mass transfer, significantly increasing bioactive compound recovery compared with conventional extraction. In particular, pulsed ultrasound exhibited superior efficiency relative to continuous mode, optimizing energy consumption while selectively preserving thermosensitive compounds. Furthermore, particle size reduction of the biomass played a key role in maximizing extraction yields. The optimization of the pulsed ultrasound-assisted aqueous extraction process was carried out through a stepwise experimental strategy. Initially, a fractional factorial design was applied to identify the variables exerting the greatest influence on bioactive compound recovery. The identification of these critical factors allowed the experimental domain to be reduced and directed the optimization stage toward the variables with the highest impact on the responses of interest. Subsequently, the selected variables were evaluated using response surface methodology, enabling the modeling of system behavior and the determination of the most favorable operating conditions for simultaneously maximizing polyphenol and betalain recovery. Robust predictive models were obtained and experimentally validated. In a subsequent stage, the optimized extracts were incorporated into a model plant-based smoothie to evaluate their potential as functional ingredients. The results demonstrated that extract incorporation increased the initial contents of phenolic compounds and betaxanthins compared with the control system. During refrigerated storage, the enriched smoothie generally maintained higher concentrations of bioactive compounds, confirming the technological feasibility of using beetroot leaf extracts for the functional enrichment of plant-based matrices. Moreover, extract incorporation did not compromise the microbiological quality of the product, although the stability of betalain pigments remained a relevant limitation for maximizing their technological utilization. Finally, subcritical water extraction was evaluated as an alternative and sustainable technological strategy compared with the methodologies previously investigated for polyphenol and betalain recovery. In this process, two thermal regimes were analyzed to determine their influence on recovery yield. The resulting fractions were subsequently incorporated into active biodegradable films based on either polylactic acid (PLA) or thermoplastic starch. These formulations exhibited antioxidant activity, UV–visible radiation blocking capacity, and modifications in barrier properties, validating their suitability as active packaging materials. Furthermore, accelerated oxidation assays using sunflower oil confirmed the ability of these films to extend the oxidative stability of the lipid system. In conclusion, the findings of this doctoral dissertation validate the technological potential of integrating green extraction processes, based on pulsed ultrasound and subcritical water, with direct applications in food matrices and packaging systems, thereby promoting the comprehensive valorization of beetroot leaves. This methodological approach establishes an important precedent for the sustainable utilization of agro-industrial by-products, strengthens the principles of the circular bioeconomy within the agri-food sector, and provides innovative solutions for the development of high-value natural ingredients and active biomaterials.

La medición domiciliaria del consumo de agua potable en Argentina presenta una deuda estructural: en el Área Metropolitana de Buenos Aires, el 40,6% del agua entregada (datos de 2016) se pierde como agua no contabilizada y solo el 19% de las unidades funcionales cuenta con micromedición, de modo que a la mayoría de los usuarios se les factura por régimen catastral y las pérdidas internas resultan invisibles para la proveedora de agua. Este trabajo aborda esa problemática mediante el diseño e implementación de un sistema de medición inteligente de extremo a extremo, compuesto por un dispositivo IoT alimentado a batería que se instala sobre el caudalímetro domiciliario y un servidor central (Head-End System, HES) que recolecta y gestiona las lecturas de todo el parque de medidores. El dispositivo registra el consumo contando los pulsos que emite el caudalímetro y lo reporta periódicamente a través de la red celular. La comunicación se apoya en un protocolo propio, liviano y de bajo consumo, basado en el estándar de medición inteligente IEC 62056 y diseñado para minimizar el tiempo de radio encendida y, con ello, extender la vida útil de la batería. El HES está diseñado para escalar horizontalmente y garantizar la recolección confiable y continua de las lecturas. Se desarrolló un prototipo funcional completo, compuesto por el firmware, el servidor y el diseño de una placa de circuito impreso propia. El hardware del dispositivo, montado sobre placas de desarrollo, permitió validar el sistema de extremo a extremo sobre la red celular comercial. Las mediciones de consumo indican que la autonomía proyectada apunta a cumplir el objetivo de 8 años de vida útil de batería, mientras que las pruebas del HES verificaron la escalabilidad del sistema y su recuperación automática ante fallos. Los resultados demuestran la viabilidad técnica de una solución nacional de micromedición inteligente y sientan la base para su evaluación económica a escala.
Residential drinking-water metering in Argentina suffers from a structural deficit: in the Buenos Aires Metropolitan Area, 40,6% of the water delivered (2016 data) is lost as non-revenue water and only 19% of the functional units have individual meters, so most users are billed on a flat cadastral basis and indoor losses remain invisible to the utility. This work addresses that problem through the design and implementation of an end-to-end smart water metering system, consisting of a batterypowered IoT device installed on the household flow meter and a central server (Head-End System, HES) that collects and manages the readings from the entire meter fleet. The device measures consumption by counting the pulses emitted by the flow meter and reports it periodically over the cellular network. Communication relies on a custom lightweight, low-power protocol based on the IEC 62056 smart metering standard, designed to minimize radio-on time and thus extend battery life. The HES is designed to scale horizontally and to guarantee reliable, continuous collection of the readings. A complete working prototype was developed, comprising the firmware, the server and the design of a custom printed circuit board. The device hardware, assembled from development boards, allowed the system to be validated end to end over the commercial cellular network. Power measurements indicate that the projected autonomy is on track to meet the 8-year battery life target, while HES tests verified the system’s scalability and its automatic recovery from failures. The results demonstrate the technical feasibility of a national smart micrometering solution and lay the groundwork for its economic evaluation at scale.

La motivación inicial de esta tesis surge a partir de la complejidad de los incendios forestales y sus significativos impactos en los ecosistemas. En este contexto, los sistemas de riesgo y alerta temprana para la detección de incendios se presentan como herramientas cruciales para la gestión y distribución eficiente de recursos antes, durante y después de estos eventos. Para ser efectivos, estos sistemas requieren capas de información diversas, entre las cuales la cobertura vegetal es fundamental, ya que representa el material disponible para la ignición. Esta tesis tiene como objetivo general investigar, modelar y mapear la cobertura terrestre a partir de la adquisición de datos satelitales de radar de apertura sintética en banda C, y el uso, adaptación y validación de la clasificación no supervisada mediante aprendizaje automático, con el fin de generar una metodología ágil de obtención de mapas de cobertura y uso del suelo para riesgos o alertas ante incendios. El trabajo se llevó a cabo sobre una zona piloto en la provincia de Córdoba. La elección de la zona de estudio se basó en el concepto de regiones fitogeográficas, que se definen como áreas homogéneas en términos de clima, suelo y vegetación, y el historial de incendios forestales en la zona. De aquí surgió la elección de la región fitogeográfica chaqueña, presente en los departamentos de San Alberto, San Javier, Calamuchita y Río Cuarto de la provincia de Córdoba, Argentina. El procedimiento se basó en el uso de datos de teledetección obtenidos mediante Radar de Apertura Sintética (SAR), técnicas de aprendizaje automático y el procesamiento de datos en la nube. De esta manera, se buscó establecer un punto de partida sólido y confiable, minimizando la intervención manual. Todos los procesos se llevaron a cabo en la plataforma Google Earth Engine (GEE), trabajando con la colección de Sentinel-1 de la Agencia Espacial Europea. En cuanto al clasificador elegido, se optó por una clasificación no supervisada utilizando el clasificador X-Means disponible en la plataforma. La clasificación no supervisada es una técnica dentro del aprendizaje automático que permite agrupar datos sin necesidad de etiquetas predefinidas y, en particular, el clasificador elegido genera una estimación del número óptimo de clústeres en función de los datos proporcionados. Se obtuvieron dos modelos de clasificación los cuales fueron validados contrastándolos con el Mapa de Cobertura y Uso de Suelo 2020-2021 desarrollado por el organismo de Infraestructura de Datos Espaciales de la Provincia de Córdoba (IDECOR). Esta publicación representa una actualización temporal de los productos anteriores (2017-2018), presentando una Unidad Mínima Mapeable (UMM) de 1 ha, con una resolución de 10 metros por píxel. El análisis de los resultados se realizó utilizando una serie de métodos complementarios, cada uno aportando una perspectiva particular. En primer lugar, se efectuó un análisis visual para evaluar el comportamiento general del clasificador. Posteriormente, se superpusieron las categorías derivadas de los modelos con el mapa de validación, contabilizando los píxeles correspondientes a cada categoría. Se analizaron los porcentajes de cobertura de cada categoría del modelo de validación dentro de la misma categoría del modelo generado. Finalmente, se implementaron tres pasos de correspondencia para identificar categorías que consistentemente representen alguna del modelo de IDECOR. Este trabajo de investigación permitió generar un mapa base sólido y confiable de cobertura de suelo mediante la clasificación no supervisada de imágenes de Radar de Apertura Sintética (SAR), destacando la importancia del uso de datos multitemporales. La multitemporalidad ofrece al clasificador la capacidad de identificar patrones y comportamientos a lo largo del tiempo, lo que mejora significativamente la diferenciación entre distintos tipos de cobertura y usos del suelo. Al integrar colecciones de imágenes obtenidas en diferentes estaciones, se logra minimizar el impacto del ruido característico de la tecnología SAR, incrementando así la precisión y fiabilidad de la clasificación.

Un Modelo Digital de Elevaciones (MDE) es una grilla regular en la que cada pixel contiene el valor de la altitud del terreno, sobre un determinado sistema de referencia plani-altimétrico. Este producto y sus derivados poseen aplicaciones en proyectos de respuesta ante alertas y emergencias, ingeniería básica en obras de infraestructura (usinas hidroeléctricas, gasoductos, tendido eléctrico, vías férreas), ingeniería ambiental, geología, procesamiento de imágenes satelitales, entre otras. Los MDE libres, ya sean locales o globales, poseen resolución espacial desde los 30 metros, pudiendo ser inapropiado su uso para diversas aplicaciones. Mediante el uso de imágenes de radar de apertura sintética (SAR, Synthetic Aperture Radar) se pueden generar MDE con mayor resolución espacial, entre 3 y 20 metros, de manera rápida y eficiente, sobre grandes extensiones, y con la posibilidad de prescindir de mediciones en el terreno (sin uso de puntos de apoyo). Interferometría de radar de apertura sintética (InSAR, Interferometry Synthetic Aperture Radar) es una técnica geodésica de la teledetección que permite explotar la información contenida en la fase de las imágenes para estimar la elevación de la superficie terrestre. Si bien la técnica presenta ciertas ventajas sobre los sistemas de adquisición ópticos, las limitaciones más importantes son: los errores atmosféricos, las distorsiones geométricas (desplazamiento por relieve, escorzo, inversión por relieve y sombra), y la incertidumbre, producto de la configuración espacial y temporal de los pares interferométricos (decorrelación). El presente trabajo de tesis se basó en la obtención de MDE mediante la técnica InSAR, con pasada repetida (RPI, Repeated Pass Interferometry), a partir de imágenes SAR en banda L (ALOS Palsar), banda C (Sentinel-1) y banda X (COSMO SkyMed). El área de estudio estuvo focalizada en una región de 21,5 km x 18,5 km que incluye al Volcán Lanín y su entorno, en la provincia de Neuquén, la cual presenta una topografía abrupta. La cadena de procesamiento interferométrico incluyó: selección de imágenes; preprocesamiento; corregistro, muestreo e interpolación; formación del interferograma; filtrado; desenrollado de fase; conversión de fase a altura y georreferenciación. Los resultados muestran interferogramas topográficos con presencia de franjas que en un análisis preliminar denotan desniveles de la topografía del terreno. Los mapas de coherencia presentan baja decorrelación en el cono del edificio volcánico y en las crestas del lado sureste. En la cima del volcán (cráter y alrededores) la decorrelación es alta. En tanto, en la zona baja se aprecia decorrelación media y alta. Los mapas de coherencia generados a partir de imágenes ALOS Palsar y Sentinel-1 presentan bondades en relación a la decorrelación observada en aquellos que fueron formados utilizando imágenes COSMO SkyMed. Finalmente, los modelos topográficos obtenidos fueron comparados con el MDE-Ar v2.0 30m (Modelo Digital de Elevaciones de Argentina) para determinar la calidad de los mismos, donde los MDE generados a partir de imágenes ALOS Palsar y COSMO SkyMed presentan bondades respecto a la calidad observada en aquellos elaborados a partir de imágenes Sentinel-1, estos últimos se encuentran afectados en gran medida por las líneas base perpendiculares, las cuales son cortas. La calidad de los MDE, para todas las bandas, varía considerablemente respecto a la coherencia, mejorando cuando la decorrelación disminuye.

El siguiente trabajo de tesis trata sobre el desarrollo de sensores ultrasónicos, capaces de medir la velocidad del sonido y el coeficiente de atenuación del medio en que se sumerjan. Conociendo estos parámetros uno puede inferir otras propiedades del fluido. En particular nos interesará conocer la concentración de dióxido de titanio en agua, ya que la motivación principal del desarrollo de los dispositivos, es que se utilicen en procesos de tratamiento de contaminantes mediante el método de Oxidación Fotocatalítica, en la cual se utiliza dióxido de titanio como catalizador. A lo largo de la tesis se desarrollaron 2 dispositivos funcionales. El primer dispositivo, denominado sensor ultrasónico de camino acústico fijo, como indica su nombre no tiene ninguna parte móvil y la caracterización del medio se realiza mediante la técnica de pulso con camino acústico fijo. El segundo dispositivo, denominado sensor ultrasónico de camino acústico variable, tiene un mecanismo que permite modificar de forma precisa la distancia entre transductores, manteniendo el paralelismo entre caras. Este dispositivo fue pensado para poder utilizar la técnica de caracterización de pulso con camino acústico variable. Esto le da ciertas ventajas frente al otro dispositivo, las cuales se explicarán en el documento. El desarrollo de la tesis consta del diseño de los dispositivos, su fabricación mediante el uso de técnicas de manufactura aditiva y de técnicas de mecanizado, de la caracterización de suspensiones de dióxido de titanio y del tratamiento de los resultados obtenidos de cada dispositivo. Sobre el final de la tesis se proponen mejoras a los dispositivos diseñados y se dejan propuestas para poder seguir iterando sobre esta temática en tesis futuras.

La integridad de los gasoductos enterrados depende en gran medida de la eficacia de los sistemas de protección catódica, cuyo objetivo es mantener el potencial caño-suelo (PSP) dentro de rangos que minimicen los procesos corrosivos. Tradicionalmente, las variaciones del PSP han sido atribuidas a factores locales, como la resistividad del suelo, el estado del recubrimiento o las condiciones operativas. Sin embargo, infraestructuras metálicas extensas también pueden verse afectadas por forzantes geofísicos externos, en particular por las variaciones del campo geomagnético asociadas a la actividad solar. En este trabajo se analiza la relación entre la actividad geomagnética y las variaciones del PSP registradas en un tramo del gasoducto General San Martín, en Tierra del Fuego, durante el período 2013–2018. A partir de la integración de mediciones de PSP y registros geomagnéticos regionales, se evalúa el grado de acoplamiento entre ambos procesos. Los resultados muestran correlaciones significativas, evidenciando que las corrientes inducidas por perturbaciones geomagnéticas pueden afectar transitoriamente la eficiencia de la protección catódica y aumentar el riesgo de corrosión. El estudio resalta la necesidad de incorporar el forzante geomagnético en los esquemas de evaluación de integridad de ductos, especialmente en regiones de alta latitud geomagnética y suelos resistivos.
