En los últimos años, el creciente interés de los consumidores sobre el impacto de la alimentación en la salud ha generado una fuerte demanda de productos que sean saludables, nutritivos y libres de aditivos químicos. El veganismo ha experimentado una ascendente popularidad, motivada por consideraciones éticas, religiosas, medioambientales y de bienestar. Concurrentemente, se ha registrado un incremento en la detección y conciencia de las intolerancias y alergias al gluten en la última década, impulsando el consumo de productos exentos de dicha proteína. A pesar de los avances, estos productos a menudo son costosos, escasos en variedad y calidad sensorial, pudiendo inducir deficiencias nutricionales. En este contexto, surge el desarrollo de esta Tesis que tiene como objetivo desarrollar un medallón vegano bajo en carbohidratos y sin T.A.C.C. seguro y con adecuada vida útil para su comercialización. Para ello, se desarrolló su formulación y proceso de elaboración, se analizaron sus propiedades fisicoquímicas, microbiológicas y organolépticas y se estudió su vida útil en dos tipos de empaque diferentes: al vacío y sin vacío en sistema Flowpack, bajo diferentes condiciones de almacenamiento y se realizó una evaluación de costos asociados a su elaboración. Los resultados evidenciaron que se logró obtener un alimento a base de soja texturizada, chía, harina de lupino y proteína de arvejas, bajo en carbohidratos, cumpliendo con los criterios establecidos para el producto. El tipo de empaque no fue un factor determinante en el estudio de vida útil, logrando en ambos casos la vida útil propuesta de 3 meses en almacenamiento congelado y al menos 4 días en refrigeración. Se observó una leve diferencia en el costo, en donde el envasado en Flowpack resultó más económico. El proceso de medición, procesado y documentación es realizado en forma autónoma, sin requerir la intervención del operador. La técnica de medición de difusividad térmica, denominada “Microscopía Fototérmica Confocal” (MFC) fue desarrollada en el Laboratorio de Haces Dirigidos y permite la medición de la difusividad térmica mediante dos haces de luz de diferente longitud de onda. La técnica presenta alta resolución espacial y es no destructiva. Se presenta el diseño y la fabricación de dos prototipos de microscopios fototérmicos adaptativos, cuyas prestaciones se validan mediante estudios sobre diversas muestras. La originalidad de los desarrollos propuestos reside en la capacidad de adaptarse automáticamente a la topografía de las muestras, logrando mediciones que no requieren alterar la naturaleza de las mismas. Se ha desarrollado un software de control con algoritmos de optimización propios con los cuales se modifican las posiciones de las lentes que componen a los sistemas ópticos de los equipos permitiendo la medición. Se desarrolló un lenguaje de programación diseñado para la confección de protocolos de alineación óptica y medición fototérmica, proporcionando así un enfoque altamente personalizado y adaptable a las necesidades experimentales. A su vez se ha desarrollado un simulador fototérmico que posee la capacidad de recrear los fenómenos térmicos y ópticos inherentes a la técnica de MFC, dando la posibilidad a estudiar el comportamiento de las señales fototérmicas bajo diversas situaciones y condiciones. En conjunto con los prototipos, estos avances permiten incorporar la técnica de MFC al ámbito de la caracterización de materiales, proveyendo una técnica no destructiva, que no requiere una preparación de la muestra a medir. The following thesis presents two new developments of equipment for the measurement of thermal diffusivity at micrometer scale on complex surfaces. The measurement, processing and documentation process is performed autonomously, without requiring operator intervention. The thermal diffusivity measurement technique, called “Confocal Photothermal Microscopy” (CPM) was developed in the Directed Beams Laboratory (Laboratorio de Haces Dirigidos) and allows the measurement of thermal diffusivity by means of two light beams of different wavelengths. The technique has high spatial resolution and is non-destructive. The design and fabrication of two innovative prototypes of adaptive photothermal microscopes are presented, whose performance is validated through studies on various samples. The originality of the proposed developments relies on the ability to automatically adapt to the topography of the samples, achieving measurements that do not require altering the nature of the samples. A control software has been developed with its own optimization algorithms with which the positions of the lenses that compose the optical systems of the equipment are modified, allowing the measurement. A programming language exclusively designed for the preparation of optical alignment and photothermal measurement protocols has been developed, thus providing a highly customized and adaptable approach to the experimental needs. At the same time, a photothermal simulator has been developed that has the capacity to recreate all the thermal and optical phenomena inherent to the CPM technique, giving the possibility to study the behavior of the photothermal signals under different situations and conditions. Together with the prototypes, these advances allow incorporating the CPM technique to the field of materials characterization, providing a non-destructive technique that does not require preparation of the sample to be measured. En este trabajo de investigación se desarrollaron materiales nanoestructurados basados en el CeO2 para su aplicación como material de ánodo en celdas de combustible de óxido sólido de temperatura intermedia (500-750 °C) (Intermediate Temperature�Solid Oxide Fuel Cell- IT-SOFC). Se realizó un exhaustivo estudio de las condiciones de síntesis y la influencia que tienen éstas sobre las características estructurales, morfológicas, texturales y redox de los sólidos obtenidos. Esto permitió optimizarlas con el objetivo de obtener los materiales con las mejores propiedades para su posterior utilización como material de ánodo. Este análisis posibilitó, también, una mayor comprensión sobre los procesos que ocurren durante la síntesis hidrotérmica del CeO2 y así proponer, el mecanismo que rige el desarrollo de la morfología de las partículas. La estrategia de síntesis consistió en el desarrollo de materiales con elevadas relaciones área/volumen (de tamaño nanométrico) y elevada conductividad mixta (iónica y electrónica) tal de mejorar los ánodos que actualmente se encuentran en desarrollo. Se utilizó como material base el Ce0,9Zr0,1O2 y se sustituyó parcialmente el Zr4+ por el Sm3+ de la red cristalina, obteniéndose el óxido mixto con composición nominal Ce0,9Zr0,1- xSmxO2-δ con 0 ≤ x ≤ 0,1, nunca antes reportados en bibliografía. La sustitución parcial con el catión aliovalente permite introducir vacancias de oxígeno en la red cristalina favoreciendo la movilidad de los iones oxígeno y, en consecuencia, la conductividad iónica del material. Así se lograron obtener materiales de ánodos altamente activos en la oxidación electroquímica de combustibles de hidrógeno o metano. Los ensayos realizados permitieron encontrar una composición (Ce0,9Zr0,04Sm0,06O1,97) y un método de síntesis (gelificación combustión con ácido cítrico) que logra obtener el mejor desempeño electrocatalítico en celdas simétricas operadas en concentraciones diluidas y concentradas de hidrógeno o metano. Para este último combustible, es de destacar que, no se observó la formación de compuestos carbonosos sobre la superficie de la celda en todo el rango de temperaturas ensayado, lo que demuestra la excelente actividad de los materiales desarrollados. Los valores de resistencia superficial específica (Area Specific Resistance, ASR) obtenidos son: 0,011 Ω.cm2 y 0,004 Ω.cm2 a 750 °C en una atmósfera de 7 %vol. y 40 %vol. H2 respectivamente; 0,14 Ω.cm2 y 0,09 Ω.cm2 a 750 °C en una atmósfera de 7 %vol. y 20 %vol. de CH4, respectivamente. Adicionalmente, se realizó un estudio sobre la estabilidad en la respuesta electrocatalítica de los materiales. Éstos mostraron ser estables sin observarse una degradación a lo largo de tres ciclos consecutivos. También se comprobó la reproducibilidad de la respuesta en dos celdas simétricas de medición distintas. Todos estos resultados aquí mencionados, hacen de estos materiales excelentes opciones para su aplicación como ánodo de IT-SOFCs. Asimismo, es importante remarcar que, en este trabajo de investigación, los resultados obtenidos mejoran valores reportados en bibliografía donde se utilizan materiales impregnados con Ni y/o Cu, permitiendo evitar las dificultades que estos metales poseen durante la operación de la celda. El trabajo se organiza en ocho capítulos. En el primer capítulo se presenta la introducción al tema, el estado del arte para las celdas de combustible de óxido sólido (SOFC) y de los materiales de ánodo, las principales motivaciones y objetivos de este trabajo. En el segundo capítulo se describe en detalle el estudio de las condiciones de síntesis y la elección de las que resultan óptimas para la obtención de los óxidos mixtos por el método de gelificación combustión con ácido cítrico e hidrotérmico. Los estudios de la estructura, morfología, textura y propiedades redox de las muestras fueron analizadas a través de las técnicas de Difracción de Rayos-X (XRD), Fisisorción de N2, Microscopía Electrónica de Barrido y de Transmisión (SEM y TEM), Reducción a Temperatura Programada (TPR), Espectroscopía Raman, y Espectroscopía in-situ de Absorción de Rayos-X cerca del borde de Absorción (XANES). Este análisis permite obtener una gran comprensión sobre los procesos que ocurren durante la síntesis hidrotérmica del CeO2, lo que resulta en una propuesta novedosa de una secuencia de auto ensamblaje nunca antes reportada para este material sin el uso de agentes dirigentes de estructura. La serie observada es secuencial lo que indica que la estructura precedente es necesaria para que la siguiente sea obtenida, siendo el proceso el que evoluciona de lanzadera (o barra) a moño a esfera. En el tercer capítulo se presenta la caracterización de los óxidos mixtos de Ce�Zr-Sm sintetizados por las dos vías de síntesis. El estudio estructural realizado por Difracción de Rayos-X muestra que los sólidos obtenidos poseen una estructura única de composición homogénea, indicando que se ha logrado la completa inclusión del catión trivalente dentro de la red cristalina. El tamaño de cristalita logrado para todas las composiciones, sin importar el método de síntesis, es nanométrico. Las Microscopías Electrónicas de Barrido y Transmisión (SEM y TEM) permitieron observar la gran influencia que tiene sobre la morfología el contenido de Sm para las muestras sintetizadas por el método hidrotérmico, no así para las muestras sintetizadas por la otra ruta de síntesis. Asimismo, se confirma que las partículas se encuentran formadas por policristales de estructura cúbica sin una orientación preferencial. Los ensayos de TPR de laboratorio indican que la incorporación del Sm promueve la reducción de las especies de Ce en el seno del material respecto de la reducción total para las muestras obtenidas por el método de gelificación combustión mientras que, para el otro, la reducción total se ve influenciada tanto por las especies de Ce superficial como del seno del material. La Espectroscopía Raman confirma la estructura única de las muestras obtenidas por gelificación combustión y permite comprobar que la incorporación del Sm3+ promueve la formación de vacancias de oxígeno extrínsecas en aumento con el contenido del catión aliovalente en la estructura. Finalmente, el estudio de Dilatometría realizado para los sólidos obtenidos por este mismo método de síntesis, permite notar que existe una composición que resulta óptima tal de lograr un sinterizado mínimo durante el pegado del electrodo al electrolito. Esta composición es Ce0,9Zr0,04Sm0,06O1,97. En el cuarto capítulo se estudia el comportamiento redox in-situ a través de la Espectroscopía XANES de los sólidos sintetizados por ambos métodos de síntesis. A su vez, se estudia el efecto que tiene el tratamiento térmico realizado durante el armado de las celdas simétricas sobre la capacidad de reducción de éstas. Los resultados indican que todos los sólidos son más activos en una atmósfera de H2 que de CH4 y también que las muestras obtenidas por el método de gelificación combustión, son más reactivas, sin importar la atmósfera utilizada aún luego de ser tratados a 1100 °C. Otra conclusión importante es que, los sólidos obtenidos por el método hidrotérmico, presentan y mantienen sustancias carbonosas fuertemente adsorbidas sobre su superficie luego del tratamiento térmico a 1100 °C, posiblemente debido a las grandes superficies que la síntesis permite obtener. En el quinto capítulo se estudia la estabilidad estructural de los sólidos sintetizados por el método de gelificación combustión, en atmósfera reductora de H2 o CH4 a temperaturas elevadas de hasta 800 °C. La técnica de Difracción de Rayos-X in�situ con luz sincrotrón confirma la estabilidad estructural de los sólidos en ambas atmósferas reductoras, aún luego de ser calcinados a 1100 °C. Asimismo, es importante destacar que no se observa la deposición de productos carbonosos sobre ninguno de los óxidos analizados en la atmósfera de CH4. En el sexto capítulo los ensayos de Espectroscopía de Impedancia Electroquímica (Electrochemical Impedance Spectroscopy- EIS) muestran que la composición que posee mayor desempeño electroquímico es el óxido Ce0,9Zr0,04Sm0,06O1,97 que resulta ser más activo en una atmósfera de hidrógeno respecto a una de metano. Siendo mejor su actividad a mayor concentración de la alimentación. Finalmente, la comparación del efecto que tiene el método de síntesis sobre las propiedades electrocatalíticas del material indica que, el sólido obtenido por el método de gelificación combustión con ácido cítrico resulta el más adecuado. Todos los sólidos aquí ensayados mostraron tener una respuesta estable a lo largo de tres ciclos consecutivos. La reproducibilidad también fue demostrada al observarse la misma respuesta en dos celdas de medición distintas. Es interesante remarcar que la composición que muestra ser óptima, tal de maximizar la conductividad total del material base, es la misma que se reporta en bibliografía y que muestra un máximo en la conductividad iónica para un óxido de cerio dopado únicamente con samario. En el séptimo capítulo se presentan las principales conclusiones y perspectivas de este trabajo de tesis. Finalmente, en el octavo capítulo se listan las publicaciones que se originaron a partir del trabajo realizado durante este período de tesis. In this research work, nanostructured CeO2-based materials were developed for its application as anode materials in Intermediate Temperature- Solid Oxide Fuel Cells (IT-SOFCs) (500- 750 °C). An exhaustive study of the synthesis conditions and their influence on the structural, morphological, textural and redox characteristics of the obtained solids was carried out. This allowed to optimize them in order to obtain the materials with the best properties for their subsequent used as anode materials. This analysis also enabled a greater understanding of the processes that occur during the hydrothermal synthesis of CeO2 and thus propose the mechanism that governs the development of the morphology of the particles. The strategy consisted in the development of materials with high area to volume ratio (with nanometric size) and high mixed conductivity (ionic and electronic) in order to improve the anodes that are currently under development. Ce0.9Zr0.1O2 was used as a based material were Zr4+ was partially substituted by Sm3+ to obtain the mixed oxide with nominal composition Ce0.9Zr0.1-xSmxO2-δ with 0 ≤ x ≤ 0.1, never reported before in the literature. The partial substitution with the aliovalent cation allows oxygen vacancies to be introduced into the crystal lattice, favouring the mobility of oxygen ions and consequently, the ionic conductivity of the material. In this sense, highly active anode materials for the electrochemical oxidation of hydrogen and methane fuels were obtained. The tests carried out in this work showed that there is a composition (Ce0.9Zr0.04Sm0.06O1.97) and a synthesis method (combustion gelation method with citric acid) that implies the best performance of the symmetric cell operated in diluted and concentrated atmospheres of hydrogen or methane fuels. For the latter, it is important to mention that no formation of carbonaceous compounds on the cell surface was observed in the entire temperature range tested, which demonstrates the excellent activity of the developed materials. The Area Specific Resistance (ASR) values obtained are: 0.011 Ω.cm2 , 0.004 Ω.cm2 at 750 °C in 7 vol%. and 40 vol%. H2 atmosphere respectively; 0.14 Ω.cm2 and 0.09 Ω.cm2 at 750 °C in 7 vol%. and 20 vol%. CH4, respectively. Stability tests carried out showed that the electrocatalytic response of all samples are stable without observing a degradation over three consecutive cycles. The reproducibility of the response was also checked in two different measurement cells. All these results mentioned here, make these materials excellent options as anode materials for IT-SOFCs. Likewise, it is important to note that the results obtained in this research work improve the values reported in the literature for impregnated anodes with Ni and/or Cu, which allows avoiding the difficulties that these metals have during operation. This work is organized in eight chapters. The first chapter presents the introduction to the topic and the state of the art of SOFCs and anode materials, the main motivations and objectives of this work. In the second chapter the study of synthesis conditions and the choice of which are optimal for obtaining the mixed oxides by the combustion gelation method with citric acid and hydrothermal synthesis is presented. Structural, morphological, textural and redox properties were studied by X-Ray Diffraction (XRD), N2 Physisorption, Scanning and Transmission Electron Miscroscopy (SEM and TEM), Temperature Programme Reduction (TPR), Raman Spectroscopy and in-situ X-ray Absorption Near de Edge Spectroscopy (XANES) techniques. This analysis provides a great understanding of the processes that occur during the hydrothermal synthesis of CeO2, resulting in a novel proposal for a self-assembly sequence never reported before for this material without the use of directing agents. In this succession, the preceding morphology is required to achieve the subsequent one, the evolution of this structures goes from shuttles to dumbbells to spheres. In the third chapter the characterization of Ce-Zr-Sm mixed oxides is presented. XRD studies show that all samples have a unique structure with homogeneous composition, implying the complete incorporation of samarium species in the crystal lattice. Regardless of the synthesis method, all samples are of nanometric size. SEM and TEM micrographies revealed the great influence that Sm content has on the morphology of samples synthesized by hydrothermal method, but not for samples obtained by the other route. Likewise, it is confirmed that particles are made by policrystals with cubic structure without a preferential orientation. Conventional TPR experiments indicate that Sm addition promotes the reduction of bulk Ce species to the total reduction when synthesized by the combustion method while, for the hydrothermal ones, the total reduction is influenced by both superficial and bulk Ce species. Raman Spectroscopy confirms the unique structure of samples obtained by citrate method and it is also observed an increasing amount of extrinsic oxygen vacancies with samarium content. Finally, Dilatometry studies carried out over samples obtained by the same method, show that there is a composition were sintering is minimum during thermal treatments used to stick the electrode to the electrolyte. This composition is Ce0.9Zr0.04Sm0.06O1.97. In the fourth chapter in-situ redox behaviour is studied through XANES Spectroscopy of the solids synthesized by both synthesis methods. The effect of the thermal treatment carried out during the assembly of the symmetric cell on their reduction capacity was also studied. Results show that all samples are more active in an atmosphere of hydrogen than methane and also, that samples obtained by the combustion method are more active, regardless of the atmosphere used even after being treated at 1100 °C. Another important conclusion is that carbonaceous species remain adsorb on the surface of hydrothermal samples after calcined at 1100 °C, probably due to large specific surface area that this synthesis allows to obtain. In the fifth chapter structural stability of samples obtained by the combustion method is confirmed in a reducing atmosphere of hydrogen or methane at temperatures as high as 800 °C. In-situ X-Ray Diffraction with synchrotron radiation also confirms the structural stability of samples even after being calcined at 1100 °C. Furthermore, it is important to note that no deposition of carbonaceous species is detected in any of the experiments carried out with CH4. In the six chapter, the Electrochemical Impedance Spectroscopy (EIS) experiments show that the solid Ce0.9Zr0.04Sm0.06O1.97 has the highest electrocatalytic performance, which is more active in a hydrogen atmosphere than in methane. Being better its activity with greater concentration of the fuel in the feed. Finally, the comparison of the effect that synthesis has on the electrocatalytic properties of the material indicates that the solid obtained with the combustion gelation method with citric acid is the most suitable. All tested solids show stable response over three consecutive cycles. The reproducibility of the response was also demonstrated in two different measurement cells. It is interesting to note that the composition that shows to be optimal, so as to maximize the total conductivity of the base material, is the same reported in the literature to maximize the ionic conductivity for an oxide of cerium doped only with samarium. In the seventh chapter the main conclusions and perspectives of this work are presented.
