Actualmente la búsqueda de materiales alternativos para el envasado de alimentos en reemplazo de los polímeros sintéticos derivados del petróleo es un foco de interés tanto para investigadores como para la industria. La aplicación de películas, formuladas con componentes comestibles, biodegradables y amigables con el medio ambiente, es una opción muy prometedora. Las películas comestibles pueden ser desarrolladas a base de biopolímeros, como zeína y almidón, formuladas con un plastificante (glicerol) y un solvente (agua – etanol), y pueden ser portadoras de compuestos antimicrobianos naturales como nisina (antibacteriano) y natamicina (antifúngico). El objetivo de esta tesis fue evaluar el efecto de distintas proporciones de almidón de mandioca y zeína en las propiedades de las películas, conteniendo natamicina y nisina. Se evaluaron sus propiedades estructurales, mecánicas, fisicoquímicas, de superficie, y antimicrobianas para decidir cuál formulación deviene en una película con óptimas características. Posteriormente, se realizó un estudio de aplicación fabricando paquetes contenedores de queso rallado y evaluando la vida útil microbiológica del alimento y sus propiedades organolépticas a lo largo del almacenamiento a 12 ºC. Los resultados indicaron que la adición de zeína mejoró algunas propiedades físico-químicas como la hidrofobicidad que aumentó con la presencia de la proteína. Otras propiedades, como la permeabilidad, la actividad de agua y la humedad, no se vieron afectadas por la presencia de zeína. El esfuerzo a la ruptura, la firmeza y el módulo de Young aumentaron significativamente con el aumento en la cantidad de zeína hasta una determinada proporción a partir de la cual los tres parámetros comenzaron a disminuir. Por el contrario, la deformación y la solubilidad disminuyeron con la presencia de zeína, sin embargo, el aumento de su concentración no mostro diferencias significativas. Adicionalmente, el agregado de zeína a las películas generó un aumento en la coloración amarilla y en la coloración roja y una disminución en la luminosidad. Si bien todas las películas registraron fallas adhesivas, la película con una proporción de zeína:almidón de 0,25:5,25 presentó la mayor resistencia media del termosellado. Con relación a la energía necesaria para causar la falla, no hubo diferencias significativas entre las formulaciones. Por otro lado, la presencia de distintas proporciones de zeína y de almidón no afectó, en ningún caso, la biodisponibilidad de los antimicrobianos contenidos en las películas. A su vez, las distintas proporciones de zeína:almidón generaron un buen efecto barrera en todas las películas comestibles frente a una contaminación externa. Asimismo, los antimicrobianos resultaron efectivos para reducir los microorganismos presentes sobre la superficie de todas las películas. En relación con el estudio de aplicación, la vida útil microbiológica del queso rallado finalizó cuando alguno de los microorganismos estuvo por encima de los límites aceptados por el Código Alimentario Argentino. En este caso, el recuento de colonias de mohos y levaduras fue el que determinó el fin de la vida útil. Ningún otro microorganismo testeado arrojó valores fuera de estos límites. La presencia de antimicrobianos en las películas comestibles logró extender la vida útil microbiológica del queso rallado 3 semanas más respecto a los paquetes de película comercial. Adicionalmente, los componentes de las películas comestibles no afectaron las propiedades organolépticas del queso. Durante su vida útil, el queso conservó su olor, color, textura, la facilidad de retirado del paquete y una apariencia agradable. En base a los resultados obtenidos, es posible decir que las películas comestibles a base de zeína y almidón de mandioca conteniendo antimicrobianos naturales representan una excelente alternativa biodegradable para reemplazar los tradicionales envases de polímeros sintéticos que se utilizan habitualmente para empaquetar queso rallado.

Un desafío para la industria de alimentos es conciliar la demanda del consumidor de alimentos más saludables con la demanda simultánea de comodidad y calidad del producto, incluidas la textura y el sabor. El presente trabajo explora la factibilidad de fortificar con polifenoles un alimento conocido por sus cualidades nutricionales y consumido popularmente, como es el yogur, sin modificar en gran medida sus características organolépticas, físicas y estructurales. Adicionalmente, se evaluaron dos métodos de incorporación de los polifenoles: de manera directa y vehiculizados en partículas proteicas WPC-gelatina. Se elaboraron seis formulaciones de yogur firme: tres de ellas con partículas proteicas WPCpolifenol-gelatina con distintas concentraciones de polifenoles (0,025; 0,05 y 0,1 % p/p), una sin partículas con polifenol (0,1 % p/p), un control sin agregados de partículas ni polifenol y un control con partículas proteicas WPC-gelatina sin polifenol. A lo largo de la vida útil de los yogures se analizaron las características relacionadas con la estructura (capacidad de retención de agua, parámetros texturales, reológicos y microestructura) de los mismos, la viabilidad de las bacterias lácticas, y la capacidad antioxidante de los polifenoles. Finalmente, se determinó la bioaccesibilidad de los mismos luego de una digestión gastroduodenal in vitro. Los resultados de este trabajo demostraron que independientemente del método de adición de los polifenoles, éstos no modificaron en gran medida el color del yogur, ni la viabilidad de las bacterias ácido lácticas. Sin embargo, se observó que la adición de polifenoles, generó un yogur con una estructura más interconectada que el yogur control, lo que fue atribuido a la capacidad de los polifenoles de interactuar con las proteínas lácteas. Esta estructura más interconectada podría explicar la mayor capacidad de retención de agua y los mayores valores de firmeza, adhesividad y cohesividad observados en este yogur. Además, la incorporación de partículas proteicas incrementó más aún estos parámetros por el mayor contenido proteico presente en dichas formulaciones. En relación a las propiedades bioactivas de los polifenoles se observó que luego de la digestión gastroduodenal se obtuvo una alta bioaccesibilidad de los mismos, manteniendo su actividad antioxidante. Por lo tanto, se puede concluir que es factible la fortificación de yogur con polifenoles de té verde para el desarrollo de un alimento funcional. Además, en lo que respecta al método de adición de los polifenoles, en este producto con alto contenido de proteínas no se justificaría el uso de las partículas proteicas como vehículo de los polifenoles, ya que las proteínas propias de la leche actuarían como ¨protectoras¨ de estas biomoléculas
