Las estructuras cuyas dimensiones se encuentran en la escala nanométrica poseen propiedades físico-químicas estrechamente relacionadas con su tamaño, forma y morfología y que difieren notablemente de las de su equivalente de mayor tamaño. Esto ha conllevado al estudio intensivo de estos sistemas las últimas décadas, donde se han encontrado propiedades magnificadas e incluso únicas y que han desencadenado avances tecnológicos importantes y el desarrollo de conocimiento en un área que está en la frontera de los fenómenos cuánticos. Una dirección importante en la síntesis de nanopartículas es la expansión a nanoestructuras híbridas conformadas por dominios discretos de diferentes materiales arreglados de manera controlada, conocidas como heteroestructuras y cuyas ventajas incluyen la multifuncionalidad, la generación de nuevas funciones y propiedades mejoradas no disponibles con un solo componente. Tres familias de nanopartículas formadas por un único núcleo de óxido de hierro y cáscaras de sílice amorfa fueron preparadas por métodos químicos. En cada caso, primero se obtuvo un ferrofluido de nanopartículas monodispersas de óxido de hierro cubiertas con ácido oleico, por la descomposición térmica de precursores orgánicos. La cobertura orgánica se aprovechó para promover el intercambio de ligandos en un proceso de microemulsión inversa, permitiendo transferir las partículas a la fase polar, donde ocurre de manera confinada la hidrólisis y condensación de TEOS (Si(OC2H5)4) y se forma una cáscara de SiO2 amorfo sobre cada nanopartícula. Los parámetros de síntesis fueron variados para obtener diferentes tamaños de núcleos y espesores de cáscaras. La transferencia de fase de nanopartículas hidrofóbicas por la formación de una cáscara química y mecánicamente resistente, es una alternativa interesante como primer paso de modificación superficial que permita la creación de estructuras más complejas y funcionales, aprovechando la conocida versatilidad de los compuestos organosilanos. A través de este método se obtienen partículas de tamaño y morfología homogénea, proveyendo un sistema que puede utilizarse como modelo para estudiar fenómenos básicos del magnetismo en la nanoescala. Núcleos de diámetros entre 8 y 13 nm con cáscaras de entre 1 y decenas de nanómetros fueron caracterizadas por difracción de rayos X (DRX), microscopia electrónica (TEM y SEM), y dispersión de rayos X a bajos ángulos (SAXS), confirmando la composición y morfología esperadas y la estabilidad de los coloides. Se llevó a cabo una intensa caracterización magnética, reconociendo la dependencia de los parámetros magnéticos principales con cada distribución de tamaños y las distancias entre núcleos. Todas las variaciones en los parámetros extraídos de la caracterización magnética muestran una dependencia con el inverso de la distancia entre partículas al cubo, permitiendo asociarlos directamente con un aumento en las interacciones dipolares a medida que disminuye el espesor de las cáscaras de sílice. Una frontera entre sistemas interactuantes y no interactuantes es identificada y discutida. The structures whose dimensions are in the nanometric scale display chemical and physical properties closely related to their size, shape and morphology, which markedly differ from their bulk counterpart. This has entailed to the intensive study of these systems over the last decades, finding magnified and even unique properties that have led to important technological advances and the development of knowledge in an area that is on the boundary of quantum phenomena. An important direction in the synthesis of nanostructures was the expansion to hybrid nanostructures conformed by discrete domains of different materials arranged in a controlled fashion, also known as heterostructures, which have shown important advantages as multifunctionality or novel functions unavailable in single component nanostructures. Three families of nanoparticles formed by iron oxide single cores and silica shells were prepared by chemical methods. First, a ferrofluid composed of monodisperse nanoparticles covered with oleic acid was obtained by thermal decomposition of organic precursors. The organic layer in the particles surface was subsequently used to promote the ligand exchange in the inverse microemulsion process, as a result the particles are transferred to the polar phase where confined TEOS (Si(OC2H5)4) hydrolyzation and condensation takes place to form an amorphous SiO2 coating on each nanoparticle. The reaction parameters were varied to obtain different cores sizes and shell thicknesses. Solvent transfer of hydrophobic nanoparticles by the formation of a chemically and mechanically resistant shell is an interesting alternative as a first step of modification that allows the creation of more complex and functional structures taking advantage of the well-known versatility of the organosilane compounds. This method yields homogeneous morphologies and low hydrodynamic radii, providing a core-shell system that can be used as a model to study of basic phenomena of magnetism at the nanoscale. Nanoparticles with cores of radii ranging from 4 to 9 nm and shells from 1 to several nanometers were characterized through X-Ray diffraction (XRD) Scanning and Transmission Electron Microscopy (SEM/TEM), and Small Angle X-ray Scattering (SAXS) confirming the desired composition, morphology and stability. An intensive magnetic characterization was performed and the dependency of the main magnetic features with the sizes and interparticle distance was identified. All the variations of the obtained parameters from the magnetic characterization show a dependency that goes as the inverse of the distance cubed, according to the expression of dipolar interactions. Hence the effect is attributed to the increase of magnetic interactions with decreasing shell thickness. A frontier between interacting and non-interacting systems is observed and discussed. En el Capítulo 2 se detallan los materiales y métodos utilizados en esta Tesis. Se resumen allí la técnica de preparación de los almidones esterificados, la cuantificación del nivel de modificación conferido, y la variedad de técnicas utilizadas para su caracterización tanto general como específica para cada aplicación de interés. En el Capítulo 3 se estudia el progreso de la reacción de acetilación de almidón de maíz catalizada por ácido tartárico. En una primera instancia se resume el estado del arte de las metodologías de acetilación de almidones, y se introduce la ruta de esterificación de polisacáridos mediada por α-hidroxiácidos. A continuación, se presentan los resultados de avance de la reacción en el tiempo bajo condiciones prefijadas, y se caracterizan los productos de reacción en términos estructura química, morfología, cristalinidad, estabilidad térmica y cambios en la polaridad del almidón resultantes de la derivatización. Seguidamente, se analiza la posibilidad de la existencia de reacciones simultáneas de entrecruzamiento del almidón con ácido tartárico, y por último se analiza cómo avanza la derivatización en el volumen del gránulo. El capítulo finaliza con la selección de potenciales usos de interés para los almidones obtenidos, cuya caracterización específica se aborda en los siguientes capítulos. En el Capítulo 4 se introduce la utilización de almidones acetilados, entrecruzados y doblemente modificados como aditivo en la industria de alimentos. Seguidamente, se preparan almidones acetilados con grado de sustitución permitido por la FDA, y los productos se caracterizan en términos de sus propiedades funcionales. Se evalúan así propiedades tales como poder de hinchamiento, solubilidad, claridad de la pasta, retrogradación, propiedades térmicas de gelatinización y propiedades reológicas; y se destacan las propiedades diferenciales de los almidones doblemente modificados producidos. En el Capítulo 5 se describe la importancia de los almidones químicamente modificados como fuente de almidón resistente; y en particular se destaca la recientemente reconocida utilidad de los almidones esterificados con grupos acetato, propionato y butirato para entregar el ácido graso de cadena corta específico al colon. A continuación, se describe la preparación de almidones propionizados, y se evalúa el efecto del grado de derivatización y la cristalinidad del almidón utilizado como materia prima en el contenido de almidón resistente de los productos. Se analiza también la resistencia a la digestión de los almidones acetilados del Capítulo 3, y se estudia el efecto de la cocción del almidón en la resistencia remanente. Se resume al final de este capítulo un caso concreto de evaluación de los almidones esterificados por la ruta aquí estudiada para vehiculizar el ácido graso esterificado al colon. En el Capítulo 6 se resumen las conclusiones generales de este Trabajo de Tesis y se plantea el trabajo futuro. This Doctoral Thesis focused on the synthesis of starches esterified by an unconventional route, its general deep characterization, and the analysis of relevant properties for two specific uses: i) modified starches for use as a food additive and ii) starches esterified with short chain fatty acids as a source of resistant starch. Chapter 1 (Introduction), reports the most important characteristics of starch and its main properties and applications are described. In addition, the state of the art is reviewed on the different types of starch modifications that are of industrial interest, addressing in particular its esterification and cross-linking. Moreover, the known methodologies to carry out starch esterification are briefly described, with particular focus on a pathway catalyzed by α-hydroxy acids that has been very little explored in the literature, and whose potential is studied in this Thesis. Finally, the foundations of two specific applications of the esterified starch that motivate the present work are introduced. The objectives of the Thesis are presented at the end of this chapter. Chapter 2 describes in detail the materials and methods used in this Thesis. The technique of preparing the esterified starches, the quantification of the level of modification conferred, and the variety of techniques used for their general and specific characterization for each application of interest are summarized therein. Chapter 3 shows the studies on the progress of the acetylation reaction of corn starch catalyzed by tartaric acid. Initially, the state of the art of starch acetylation methodologies is summarized, and the polysaccharide esterification route mediated by α-hydroxy acids is introduced. Next, the results of the reaction in time under pre-set conditions are presented, and the reaction products are characterized in terms of chemical structure, morphology, crystallinity, thermal stability and changes in starch polarity resulting from the derivatization. Then, the possibility of the existence of simultaneous cross-linking reactions of the starch with tartaric acid is analyzed, and finally the progress of the derivatization inside the granule is studied. The chapter ends with the selection of potential uses of interest for the obtained starches, whose specific characterization is addressed in the following chapters. Chapter 4 introduces the use of acetylated, cross-linked and doubly modified starches as an additive in the food industry. Acetylated starches are prepared with a degree of substitution allowed by the FDA, and the products are characterized in terms of their functional properties. Properties such as swelling power, solubility, clarity of the paste, retrogradation, gelatinization thermal properties and rheological properties are thus evaluated; and the differential properties of the doubly modified starches produced are highlighted. Chapter 5 describes the importance of chemically modified starches as a source of resistant starch; and in particular, the newly recognized utility of starches esterified with acetate, propionate and butyrate groups to deliver the short-chain fatty acid specific to the colon is highlighted. The preparation of propionized starches is also described, and the effect of the degree of derivatization and the crystallinity of the starch used as a raw material in the resistant starch content of the products is evaluated. The resistance to digestion of the acetylated starches in Chapter 3 is analyzed, and the effect of the starch cooking on the remaining resistance is studied. At the end of this chapter, a concrete case of evaluation of starches esterified by the route studied here to transport the esterified fatty acid to the colon is summarized. El enfoque adoptado para la predicción, propagación y efectos de las vibraciones es primordialmente analítico, con el objetivo de brindar medios para evaluar su impacto y recomendaciones para la toma de decisiones de los distintos actores de la sociedad. Los modelos de predicción desarrollados cubren parte del espectro de las actividades humanas que originan vibraciones: movimiento sincronizado de multitudes, tránsito y ferrocarriles. Estas fuentes se pueden considerar estadísticamente estacionarias bajo ciertas condiciones de duración y separación entre eventos. Esta hipótesis permite un análisis sintético de su propagación en el medio. El campo de desplazamientos se representa mediante las componentes superficiales de las ondas producidas por una carga dinámica en la superficie de un semiespacio isótropo y homogéneo. Éstas son conocidas como ondas de Rayleigh y su expresión admite una forma cerrada. La amplitud de las distorsiones producidas en el suelo se corresponde con una respuesta bajo un régimen viscoelástico. La validez de representar las vibraciones únicamente mediante estas ondas queda sujeta a las características dispersivas del suelo en cuestión y la distancia respecto a la fuente analizada, identificando así el campo de vibraciones cercano y lejano. El efecto de las vibraciones depende del entorno donde se desarrollan las actividades. La respuesta de personas, instalaciones, estructuras, contenidos y elementos no estructurales depende de la amplitud de las vibraciones y la relación entre la frecuencia de excitación y las frecuencias naturales correspondientes. A los modelos de respuesta estructural en el rango elástico y el modelo no lineal para la cinemática de contenidos, se integran normativas, guías de diseño y evaluación, códigos de práctica y literatura específica para definir valores de referencia y límites para las vibraciones. Los modelos se contrastan con la campaña de mediciones ejecutada. Se realizan estudios activos en un campo uniforme de gran extensión bajo fuentes impulsivas y periódicas para determinar las propiedades de propagación del suelo y la validez del campo de desplazamientos adoptado. Se comparan los modelos de predicción desarrollados con los registros, identificando sus capacidades, limitaciones y los parámetros que gobiernan la magnitud de las vibraciones y su atenuación.
