La presente tesis doctoral tuvo como objetivo desarrollar productos vegetales listos para el consumo como estrategia para la revalorización de subproductos agrícolas. Adicionalmente, se investigaron métodos de preservación no térmicos con el fin de estabilizar los productos desarrollados durante el almacenamiento refrigerado y minimizar el riesgo tras una potencial contaminación microbiológica. En una primera etapa, se desarrolló un novedoso producto vegetal mínimamente procesado conteniendo hojas vegetales subutilizadas (50% lechuga morada criolla, 25% hojas de remolacha y 25% rúcula), en el que se aplicaron antimicrobianos naturales e irradiación UV-C para mejorar su seguridad microbiológica, vida útil y calidad nutricional. Se exploraron diferentes estrategias de desinfección y conservación, evaluando la efectividad del ácido cítrico (0,5%, 5 min) y del aceite esencial de orégano (0,005-0,01%) aplicados por inmersión del producto en las soluciones correspondientes durante la etapa de desinfección y de nisina (250-500 UI/g) y aceite esencial de orégano (300-600 ppm) dosificados post-desinfección. Los resultados mostraron que la desinfección con ácido cítrico seguida de la adición de aceite esencial de orégano (600 ppm) redujo significativamente los recuentos de bacterias aerobias mesófilas y enterobacterias en comparación con la desinfección convencional con cloro (200ppm). Además, la aplicación combinada de una etapa de desinfección con ácido cítrico y la posterior incorporación de aceite esencial de orégano y nisina como aditivos alimentarios, logró una reducción de 5 log UFC/g en Listeria innocua y Escherichia coli, alcanzando niveles indetectables al día 3 de almacenamiento refrigerado. A su vez, se evaluó el impacto de la irradiación UV-C en dosis de 1, 4 y 7 kJ/m² sobre la vida útil microbiológica y los indicadores de calidad del producto, sin aplicar desinfección química previa. El análisis de gases de cabeza indicó un posible aumento en la tasa respiratoria de las muestras irradiadas; no obstante, se obtuvieron beneficios significativos en términos de calidad y seguridad. La dosis intermedia (4 kJ/m²) fue la más efectiva, logrando extender la vida útil microbiológica hasta seis veces, minimizar la pérdida de polifenoles totales y mantener la capacidad antioxidante (DPPH), lo cual se atribuyó a una menor actividad de la enzima polifenoloxidasa (PPO) y a un mayor contenido de ácido ascórbico al día 4 de almacenamiento. Todos los niveles de irradiación fueron efectivos en la reducción de L. innocua y E. coli, con disminuciones de hasta 2 ciclos logarítmicos durante el almacenamiento. Finalmente, se optimizó la combinación de tratamientos mediante metodología de superficie de respuesta, identificando que la aplicación de 0,3325% de ácido cítrico, 240 ppm de aceite esencial de orégano y 6,4 kJ/m² de UV-C ofreció los mejores resultados en el punto del almacenamiento seleccionado para la optimización (tercer día en condiciones de refrigeración). Esta combinación logró reducir en aproximadamente un 30% los recuentos de bacterias aerobias mesófilas y enterobacterias, incrementar en un 65,97% el contenido de polifenoles y mejorar significativamente la capacidad antioxidante del producto, con aumentos del 67,29% y 129,98% en los valores de FRAP y DPPH, respectivamente. Además, se observó una reducción del 53,66% y 35,49% en la actividad de las enzimas PPO y peroxidasa (POD), lo que sugiere un menor deterioro asociado a la actividad enzimática del producto. En conjunto, se pudo concluir que la integración de antimicrobianos naturales e irradiación UV-C constituye una estrategia innovadora y eficaz para optimizar la calidad, prolongar la vida útil y garantizar la inocuidad microbiológica de ensaladas listas para el consumo. Estos hallazgos no solo evidencian el potencial de las tecnologías no térmicas en la conservación de productos frescos, sino que también abren nuevas posibilidades para su aplicación a escala industrial en el desarrollo de alimentos más seguros y sostenibles. Por otro lado, se desarrolló con éxito una bebida vegetal tipo gazpacho lista para el consumo a partir de subproductos de brócoli y zanahoria, con un alto contenido nutricional y aceptabilidad sensorial. Adicionalmente, se aplicaron tratamientos de preservación para mejorar su estabilidad microbiológica y nutricional durante el almacenamiento refrigerado (5 °C). Entre los resultados obtenidos, se observó que las muestras control (sin tratamiento) superaron el límite de vida útil microbiológica desde el día cero. En cambio, una pasteurización tradicional mejoró la calidad microbiológica del producto, aunque provocó cambios notables en el color y una disminución en el contenido de polifenoles totales. Por otro lado, el tratamiento con altas presiones hidrostáticas permitió extender la vida útil hasta al menos 28 días, preservando mejor el contenido de polifenoles totales y logrando mejoras en la estabilidad del color en comparación con las muestras pasteurizadas. El tratamiento de baño ultrasónico a temperaturas intermedias no logró mejorar la calidad microbiológica de la bebida, pero sí mostró mejoras en los parámetros de color y de contenido de polifenoles totales en comparación a las muestras control y pasteurizadas. Finalmente, la aplicación de tratamientos combinados (altas presiones hidrostáticas y ultrasonidos) logró una vida útil de la bebida de al menos 28 días en refrigeración y mejoras en la coloración del producto (parámetros L*, a* y b*) luego de su aplicación. A partir de los resultados obtenidos en la presente tesis doctoral, se resalta el potencial de revalorización de porciones hortícolas tradicionalmente subutilizadas en la cadena agrícola, incorporándolas como ingredientes en el desarrollo de nuevos productos vegetales. Esta estrategia no solo promueve una mayor sustentabilidad en el sistema alimentario, sino que también permite optimizar el uso de los recursos naturales y reducir las pérdidas económicas asociadas al desaprovechamiento de materia prima. Asimismo, los tratamientos de preservación no térmicos evaluados en este estudio demostraron ser eficaces para extender la vida útil microbiológica de los productos desarrollados y minimizar los riesgos The present doctoral thesis aimed to develop ready-to-eat plant-based products as a strategy to valorize agricultural by-products. In addition, non-thermal preservation methods were investigated to stabilize the developed products during refrigerated storage and to minimize the risk associated with potential microbiological contamination. In the first stage, a novel minimally processed plant-based product was developed using underutilized vegetable leaves (50% local purple lettuce, 25% beet greens, and 25% arugula). Natural antimicrobials and UV-C irradiation were applied to improve its microbiological safety, shelf life, and nutritional quality. Different disinfection and preservation strategies were explored, evaluating the effectiveness of citric acid (0.5%, 5 min), oregano essential oil (600 ppm), and nisin (250–500 IU/g), applied either by immersion during the disinfection stage or added post-disinfection. Results showed that disinfection with citric acid followed by the addition of oregano essential oil significantly reduced mesophilic aerobic bacteria and enterobacteria counts compared to conventional chlorine disinfection. Moreover, the combined application of citric acid disinfection and the subsequent incorporation of oregano essential oil and nisin as food additives achieved a 5-log CFU/g reduction in Listeria innocua and Escherichia coli, reaching undetectable levels by day 3 of refrigerated storage. The impact of UV-C radiation at doses of 1, 4, and 7 kJ/m² on the microbiological shelf life and quality indicators of the product was also evaluated, without prior chemical disinfection. Head gas analysis indicated a possible increase in the respiratory rate of irradiated samples; however, significant benefits were achieved in terms of quality and safety. The intermediate dose (4 kJ/m²) was the most effective, extending the microbiological shelf life up to sixfold, minimizing the loss of total polyphenols, and maintaining antioxidant capacity (DPPH), which was attributed to lower polyphenol oxidase (PPO) activity and a higher ascorbic acid content on day 4 of storage. All irradiation levels were effective in reducing L. innocua and E. coli by up to 2 log cycles during storage. Finally, the combination of treatments was optimized using response surface methodology, identifying that the application of 0.3325% citric acid, 240 ppm oregano essential oil, and 6.4 kJ/m² of UV-C irradiation yielded the best results on day 3 of storage. This combination reduced mesophilic aerobic bacteria and enterobacteria counts by approximately 30%, increased polyphenol content by 65.97%, and significantly improved the product's antioxidant capacity, with increases of 67.29% and 129.98% in FRAP and DPPH values, respectively. Additionally, a reduction of 53.66% in PPO and 35.49% in peroxidase (POD) activity was observed, indicating lower enzymatic deterioration of the product. Taken together, the integration of natural antimicrobials and UV-C irradiation represents an innovative and effective strategy to optimize quality, extend shelf life, and ensure the microbiological safety of ready-to-eat salads. These findings not only highlight the potential of non-thermal technologies for fresh product preservation but also open new opportunities for their industrial-scale application in the development of safer and more sustainable foods. On the other hand, a ready-to-drink, gazpacho-type plant-based beverage was successfully developed using broccoli and carrot by-products, characterized by high nutritional content and good sensory acceptability. Preservation treatments were also applied to improve its microbiological and nutritional stability during refrigerated storage (5 °C). Results showed that control samples (untreated) exceeded the microbiological shelf-life limit from the first day. In contrast, pasteurization improved the microbiological quality of the product but caused noticeable changes in color and a reduction in total polyphenol content. High hydrostatic pressure (HHP) treatment extended shelf life to at least 28 days, better preserved total polyphenol content, and improved color stability compared to pasteurization. Ultrasonic bath treatment at intermediate temperatures did not improve the microbiological quality of the beverage but resulted in better color and polyphenol content parameters compared to both control and pasteurized samples. Finally, the combined application of high hydrostatic pressure and ultrasound achieved a shelf life of at least 28 days under refrigeration, along with improvements in the product’s color parameters (L*, a*, and b*) following treatment. Based on the results obtained in this doctoral thesis, the potential for revalorizing traditionally underutilized horticultural fractions within the agricultural supply chain is underscored by incorporating them as ingredients in the development of new plant-based products. This strategy not only promotes greater sustainability within the food system, but also allows for more efficient use of natural resources and a reduction in economic losses associated with raw material waste. Furthermore, the non-thermal preservation treatments evaluated in this study proved effective in extending the microbiological shelf life of the developed products and minimizing risks related to microbial contamination, thus supporting their future commercial viability. El desarrollo del trabajo abarcó el estudio de la arquitectura de procesadores SPARC a la que pertenece el procesador LEON3, el análisis de la implementación del estándar OSEK y de la capa POSIX utilizados en el Firmware CIAA, el diseño de las estrategias de reemplazo del contexto de tareas y de administración de las interrupciones del sistema, la implementación en código de estas estrategias en la capa de portabilidad, su puesta en marcha utilizando dos modelos de sistemas basados en el procesador LEON3 (uno físico en FPGA y otro simulado), y la validación del sistema utilizando una batería de ensayos estandarizados que forma parte del Firmware CIAA. El objetivo principal del presente trabajo es el desarrollo de catalizadores alternativos a los comercialmente disponibles para la reacción de Water Gas Shift (WGS), empleando Cu y/o Ni como fase metálica, y óxidos de Ce promovidos con Pr, La o Mn como soportes. En particular, se propone estudiar el efecto de la adición del Pr, La y Mn al CeO2 en la estructura y propiedades redox, a partir de diversas técnicas de caracterización, como determinación de área superficial, microscopia de barrido, difracción de rayos-X, espectroscopia fotoelectrónica de rayos-X, reducción a temperatura programada, y capacidad de almacenamiento de oxígeno. La necesidad de optimizar el desempeño de un codificador óptico basado en un haz no difractivo (NDB) llevo a diseñar y fabricar un circuito integrado fotodetector de anillos concéntricos que pudiera sintetizar el patrón de detectividad necesario para hacerlo. En este trabajo se implemento por primera vez este chip en un codificador óptico y se caracterizo su funcionamiento. Se encontró que el chip debe ser alineado micrométricamente con el centro del NDB para que la señal de salida del codificador no pierda amplitud y contraste. Para automatizar el proceso de alineación se diseñó y fabrico un segundo chip que permite interconectar sus pixeles de manera programable para sintetizar el patrón de detectividad centrado con el NDB. Este chip se caracterizó y también se implementó en el codificador óptico basado en un NDB. Luego, una unidad de control especifica que automatiza el proceso fue diseñada y descripta en VHDL, implementada en FPGA y probada junto con el chip. La capacidad de interconectar pixeles de manera arbitraria que posee este nuevo chip abre la posibilidad de otras aplicaciones que también fueron ensayadas en esta tesis con resultados promisorios. The need to optimize the performance of optical encoders based on non diffractive beams (NDB) has led to the design and construction of a photodetector integrated circuit that can synthesize the needed detectivity pattern. In this work, this chip was implemented on an NDB based optical encoder to check its performance. The design worked properly, however, the photodetector center has to be aligned with the center of NDB with micrometric tolerances. In order to automatize the alignment process, a second chip was designed and fabricated. This second chip has the ability to interconnect their pixels in an arbitrary manner, allowing this way that the detectivity pattern can be synthetized around the NDB center. The chip was characterized and it was also implemented on the NDB optical encoder. A dedicated control unit that automatizes the process was designed, described in VHDL, prototyped on FPGA and tested. Finally, other applications spinned-off from the pixel interconnection capability of the chip were implemented with promising results. Este trabajo presenta el diseño de circuitos integrados digitales para la implementación de un TAG RFID en un chip CMOS. Los requerimientos de los circuitos son definidos por un proyecto de investigación marco cuyo objetivo general es el desarrollo de sensores inalámbricos de radiación ionizante para dosimetría médica. Esto requiere la integración de diferentes subsistemas en un ASIC a fabricar en tecnología CMOS. Los circuitos presentados en esta tesis consisten en un bloque digital de control, que puede recibir y responder a las tramas definidas en la norma ISO/IEC 14443A, y mediante un protocolo propietario encima de la norma, controlar otros subcircuitos del chip necesarios para la adquisición de la señal dosimétrica y su posterior transmisión inalámbrica. La implementación de la norma es presentada en un núcleo IP genérico. Por lo tanto es apto para uso en otros proyectos y con cualquier lector comercial que trabaje bajo norma. El protocolo propietario consiste en cinco mensajes que permiten el muestreo de hasta quince TAGs de forma sincronizada. El muestreo simultáneo de múltiples TAGs sensores utilizando RFID es una estrategia novedosa desarrollada en esta tesis, el cual representa un potencial avance en el desarrollo de métodos de control dosimétrico en aplicaciones médicas. El trabajo realizado incluye el diseño de los bloques digitales utilizando HDL System- Verilog y su verificación funcional. Luego, se utiliza el kit de diseño del proceso (PDK, por sus siglas en Inglés) XH018 (nodo tecnológico de 180 nm) de la foundry XFAB para realizar la síntesis, el place and route y la generación de las máscaras de fabricación (layout). Las pruebas de verificación llevadas a cabo dan alta confianza en el diseño. Las mismas incluyen: 60 horas de simulaciones del RTL ejecutando 187 aserciones de SystemVerilog casi cien millones de veces y generando informes de cobertura de código, la verificación formal de equivalencia entre lógica RTL y los netlists post síntesis y post implementación, Design Rules Check (DRC), y Layout Vs Schematic (LVS); todas esas pruebas tienen resultados favorables. El layout final no tiene violaciones de timing, el slack de Setup menor es 1,59 ns y de Hold es 0,02 ns, el área utilizada es 0,087mm2 (295,68 μm por 294,00 μm), y la estimación de consumo de potencia promedio es 256 μW.
